Deep-fried wontons are a guilty pleasure of mine, and easily one of my favourite types of dumplings in the entire world.
And while I never make them at home because of their sheer gluttony (and scalding oil splats), when I get my hands on some, trust when I say I could easily eat them by the dozen.
… And eat them by the dozen is precisely what I did when I went home to Canada this week, only to be surprised by some homemade pork and shrimp wontons, deep-fried to perfection, and served with tasty sweet chilli sauce.
In this post, I’ll be sharing my dad’s recipe for deep fried pork and shrimp wontons. As a man who has been working in the restaurant biz for 40+ years, he knows a thing or two about wontons, so I hope you enjoy his recipe!
Deep Fried Pork & Shrimp Wonton Ingredients
- 500g ground pork
- 1 Tbsp chopped green onion
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/2 tsp chicken broth mix
- 1 tsp soy sauce
- 1 tsp oyster sauce
- 1 pinch of white pepper powder
- 1 egg
- 1 tsp cornstarch
- 2 Tbsp water
- 1 tsp sesame oil
- 100g shrimp
- 1 pinch of salt
- 1 pinch of white pepper
- 1 pack of wonton wrappers
- 3 cups oil (for frying)
Instructions for the Perfect Deep Fried Pork & Shrimp Wontons
Chop up your shrimp and mix it in a bowl with 1/2 egg white + pinch of salt and white pepper.
Stir for 2-3 minutes until thoroughly covered and sticky.
Keep shrimp in fridge for 30 minutes before using.
To assemble your wontons, place about half a tablespoon of filling on top of your wrapper, then fold according to your preferred method. Here is a video showcasing ways to fold wontons.
When ready to fry, heat 3 cups oil to medium heat (300 degrees F). Make sure it’s not smoking, as that’s a sign it’s too hot.
Put your wontons into the oil and separate them so they don’t stick together.Reduce heat to 275 degrees Fahrenheit.
Deep fry for one minute, or until light golden brown. Remove and drain.
For best results, double fry them by turning the heat higher to 350 degrees F, and fry for another minute until golden brown.
Serve with your dipping sauce of choice (sweet chilli goes great with deep fried wontons!) and enjoy.
